Caprice

Caprice is an elegant gastronomic sour with a popular combination in France of dessert strawberries and pink tomatoes with the addition of a light tarragon spice.

Ingredients

30ml (1 oz) Mont Blanc Vodka with strawberries*
10ml (0,34 oz) Mont Blanc Vodka with tarragon**
30ml (1 oz) Tomato water
30ml (1 oz) Basic cordial***

Method

01. * Cut fresh strawberries 0,25 kg) into slices and add to Mont Blanc Vodka 1,0 L) Insist 24 hours in a dark cool place Filter through a sieve
02. ** Mix Mont Blanc Vodka 1,0 L) and fresh tarragon 0,075 kg) Insist in a dark cool place for 24 hours. Filter through a sieve
03. *** Take water (0,615 L) fructose (0,615 kg) and acids (0,004 kg Wine acid, 0,01kg Citric acid, 0,008 kg Malic acid and mix all ingredients until fructose completely dissolved.
04. Tomato in Rose Chocolate - melt the rose chocolate 0,15 kg) in a water bath Thread a cherry tomato onto a skewer and carefully dip into the chocolate. Cool down in the refrigerator. Store in a cool place
