French Dispatch

An aperitif drink dedicated to French literature.
While many predict the decrease interest to a book, it lives on. The highball is decorated with a red ribbon of pomegranate jelly, like a bookmark in a book.

Ingredients

30ml (1 oz) Mont Blanc Vodka
40ml (1,4 oz) Vanilla Dry Vermouth
3.5ml (0,12 oz) Yuzu Juice
60ml (2 oz) Soda Water

Method

Pomegranate Jelly Ribbon
01. In a saucepan, mix water (0,615L), sugar (0,615kg), acids (0,004kg Wine acid, 0,01kg Citric acid, 0,008kg Malic acid) and pomegranate flowers (0,075kg).
02. Simmer for 30 minutes over low heat.
03. Then add gelatin (0,01kg) and dissolve it without boiling.
04. Pour onto a silicone surface and leave in the refrigerator for 12 hours.
